Super Healthy Guacamole with Peas and FitFlax™


  • 10-ounce pack of frozen peas
  • 1 small ripe avocado
  • ½ cup cilantro, stems removed
  • ½ ripe tomato, deseeded and chopped
  • 1/3 cup chopped onion (optional)
  • Squeeze of fresh lime juice
  • 6 tbsp FitFlax™
DIRECTIONS
Cook peas according to package instructions. Empty into a colander, drain and rinse with cold water. Place peas, avocado and cilantro in a blender and blend to desired consistency. Spoon into a bowl with chopped tomato and onion. Add a squeeze of lime juice, stir and enjoy with a margarita! (Makes 8 servings)

Banana Coffee Smoothie

  • 1 small frozen banana
  • ¾ cup fat free milk
  • ½ cup 0% Greek yogurt
  • ½ teaspoon instant coffee
  • 1 ½ tablespoons FitFlax™
  • 2 packets Stevia (or sweetener of your choice)
  • dash of ground cinnamon
  • dash of nutmeg
  • 4 ice cubes
DIRECTIONS
Combine all ingredients in blender. Blend until smooth. Bottoms up! (Makes 1 serving)

Yummy Yogurt Parfait

  • 1 ½ tablespoons FitFlax™
  • 2 chocolate (or caramel) rice cakes crumbled
  • 6 oz. vanilla fat free yogurt
  • 1 cup fresh strawberries sliced
DIRECTIONS
Mix the FitFlax™ and the rice cake crumble in a bowl. Place 1/3 of the strawberries on the bottom of a tall glass and add ½ the yogurt. Top with another 1/3 of the strawberries and then add ½ the FitFlax™ rice cake mixture. Then place the rest of the yogurt on top, cover with the remaining strawberries and sprinkle the other ½ of the FitFlax™ mixture on top. Bon Appétit! (Makes 1 serving)

Banana Berry Shake


  • 1 ½ tablespoons FitFlax™
  • 1/2 cup frozen strawberries
  • 1 cup fat free milk
  • 1/2 banana
  • 6 ice cubes
DIRECTIONS
Toss in blender and blend till smooth. Cheers! (Makes 1 serving)

 

Super Muffin

  • 1 cup FitFlax™
  • 1 ½ cups whole wheat flour
  • ¾ cups Splenda®
  • 1 tablespoon baking powder
  • ¾ teaspoon nutmeg
  • 1 ½ teaspoon cinnamon
  • 2 cups fat free milk
  • 1 beaten egg
DIRECTIONS
Pre-heat oven to 350 degrees. Mix all dry ingredients together. Beat egg in a separate bowl and then add the milk. Pour the combined liquid ingredients into the dry ingredients and stir until moistened. Spray muffin tin with non-stick spray. Bake for approximately 20-25 minutes. Muffins should be lightly browned on top and sides. Enjoy the Flax Seeds benefit! (Makes 12 muffins)

Low Carb Peanut Butter Cookies


  • 2 Tablespoons FitFlax™
  • 1 cup peanut butter
  • 1 cup granular Splenda®
  • 1 teaspoon. Baking soda
  • 1 large egg
DIRECTIONS
Mix together and place small balls on greased cookie sheets. Delicious and healthy. These cookies make great low carb snacks! Bake at 350º for 10 minutes. (Makes 12 cookies)

 

Flax Brownies "Flaxies"

  • 3/4 cup light margarine,melted
  • 1 1/2 cups sugar
  • 2 teaspoons vanilla
  • 1/2 cup egg white at room temperature
  • 2 tablespoons egg whites at room temperature
  • 3/4 cup whole wheat flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 4 tablespoons FitFlax™
DIRECTIONS
Preheat oven to 350°F. With electric mixer, cream together margarine, sugar & vanilla. Add egg whites, a little at a time, beating well after each addition. In medium sized bowl, whisk together flour, cocoa, baking powder & salt. Gradually fold flour mixture into sugar mixture, blending well. Do not over mix. Stir in FitFlax™ Spread batter into lightly greased 8"x8" pan. Bake 40-45 minutes or until brownies begin to pull away from sides of pan. Test with toothpick or knife to check if it is done. (Makes 8 large brownies)
